Intense straw yellow color, intense foam and a crown of excellent workmanship. On the nose it is fresh with green hints of aromatic vegetal that come out in synergy with light and pleasant spices, citrus notes on the finish. In the mouth it is fresh and savory, excellent persistence. In the aftertaste emerge notes of yeast, discrete and well blended.

It represents the challenge to multi-vintages, in an effort to bring out the infinite nuances of our terroir: Terre della Baronia. A Cuvée that represents the fusion of 9 Chardonnay clones grown in 9 different crus, supported by some Inzolia clones selected for their particular tannin profile, capable of conferring complexity and emphasizing the elegance of our Chardonnays, to which approximately 10% of ancienne cuvée is added. Edition number 6 created starting from the 2015 harvest.

  • Terre della Baronia Gran Cuvée, the first Metodo Classico produced by the company presented in 1993, embodies our best art of blending. It represents the challenge to multi-vintages in the effort to bring out the infinite nuances of our terroir, the Terre della Baronia.

    FOCUS: THE CREATION OF THE CUVÉE The Terre della Baronia Gran Cuvée is the result of meticulous work of selection and assembly of the best sparkling bases of the different vintages. The crucial phase is represented by the tastings of the cuvées to select those with the best characteristics, which will then create that accord of aromatic and gustatory nuances that will give rise to a complex and harmonious wine. The main cuvée comes from the 2015 harvest and is the result of the fusion of 9 Chardonnay clones, grown in as many different sub-areas, supported by some Inzolia clones capable of conferring complexity and emphasizing the elegance of our Chardonnays. To these is added approximately 10% of ancienne cuvée, of which the oldest harvest is 2006.

    AVERAGE AGE OF VINEYARDS: Over 30 years

    SOIL TYPE: Contrada Milici: plateau of marly origin with a high clayey component, strongly calcareous, rich in skeleton – Contrada Ninotta: white soil with a strongly calcareous marl and grey loamy-silty soil.

    TRAINING SYSTEM: Tendon - Espalier with spurred cordon and guyot pruning

    STRAIN PER HECTARE: Tendon: 1600 - Back: 5600

    YIELD PER HECTARE: 80 q HARVEST TIME: Chardonnay: first half of August - Inzolia: early September

    HARVEST METHOD: Selection of bunches on the plant and manual harvesting in 14 kg crates

    VINIFICATION: Pressing of the whole bunch of grapes with enhancement of only the first pressings. Fermentation at controlled temperature. Refinement of the sparkling wine bases in steel tanks.

    MATURATION: The cuvée, with the addition of the liqueur de tirage, was started to ferment. The bottles were stacked to refine on the lees for a period of no less than 48 months.

    ALCOHOL: 12.5% Vol. A

    PAIRING: Excellent aperitif, ideal with fish-based dishes, shellfish, molluscs and oysters, foie gras.

    SERVING TEMPERATURE: 5-7 °C
